
The former bartaco space at Edgewood Station, which was vacated last fall, will soon be occupied by a New Orleans-inspired brunch restaurant called Ruby Sunshine.
Eric Weishaupt and his wife Jennifer founded Ruby Slipper Restaurant Group in New Orleans in 2008 with the Ruby Slipper Café. The Ruby Sunshine restaurant is the latest concept from the restaurant group, focusing on New Orleans-themed breakfast, brunch and cocktails.
“Ruby Sunshine will offer Big Easy twists on Southern brunch classics, including benedicts, pancakes, and French Toast, as well as eye-opening cocktails,” the Ruby Sunshine website reads.
Eric said he was born and raised in Alabama, the BBJ reports.
The restaurant will be located at 1017 Oxmoor Road and plans to open sometime in 2019. For more information, visit rubysunshine.com.
